The new Ethiopia Ardi Natural Yeast process is an intensely fruity and floral coffee and comes to us from the Biru Bekele Washing Station. The station, located in the Guji Zone of the Oromia region of Ethiopia, was built by Biru Bekele in 2018. The coffee the they buy and process from smallholder producers in the area ranges in elevation from 1750 to 2050 meters above sea level, and is some of the highest quality in the country.
This lot in particular is a special yeast-fermented lot where the washing station mixes a
Cima yeast preparation with the coffee still in cherry form and ferments it for 4 days before moving the coffee to raised beds to dry for 21 days.
In the cup, we taste blue raspberry slushy (yes really lol), coconut, rose!
