Our partnership with Finca Concepción Buena Vista grew this year, and we really were excited to share several of the Solano family's amazing 2022 offerings with our customers. We have two final releases from this harvest, and they are wild!
This first release is an experimental Sous Vide process pioneered by David and Eddy Solano at the farm. The coffee undergoes fermentation in sealed bags submerged in a controlled temperature environment.. Following this fermentation, the cherries are spread on raised beds in the open air to dry for 21 days.
The resulting cup is luxurious and full bodied—think melted Neapolitan ice cream, mixed with cordial cherry and Nutella!
